Cole Slaw or Egg Salad....You Decide

Another holiday has come and gone.  I hope you enjoyed a wonderful Easter with family and friends.  Is your refrigerator full of leftovers?  Are you craving something light?  This is going to be my lunch on this Monday- after-Easter.  It's a cross between egg salad and coleslaw....both HUGE favorites of mine.  The poppyseeds are just a happy addition.  Something to throw in there to make me smile.

I discovered the recipe on this blog and finally had some time to put it together.  It's also a great way to use any left-over hard boiled eggs.  It is the time of year when some houses have A LOT of leftover hard boiled eggs.

Other than boiling a few eggs, it only took a few minutes of chopping and mixing.  Give it a try if you like egg salad or cole slaw or both.

Gather up some ingredients~


1/2 head of finely, chopped cabbage
2 chopped green onions
2 chopped celery stalks
2-3 hard boiled eggs, lightly mashed

2 tbs. Dijon mustard
1/4 Miracle Whip Light
1/2 tsp. sugar
salt and pepper to taste
1 tbs. poppy seeds

Finely chop the cabbage, green onions, and celery and put into a large bowl.  In a separate bowl, combine the mustard, Miracle Whip, and sugar.  Mix into cabbage mixture and season to taste with salt and pepper.  Gently stir in mashed hard boiled eggs and poppy seeds.  Add additional Miracle Whip as needed.

Refrigerate up to three days, if it lasts that long.  Hope you are enjoying a great start to the week.  I am off to pack....a horse ranch in Georgia is calling my name!  Happy Monday from Charleston Treasures!
